For the Pasta:
- 12 oz spaghetti (or linguine)
- 2 lobster tails (about 8 oz each), meat removed and chopped
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 3 cloves garlic, minced
- ½ teaspoon red pepper flakes
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ cup cherry tomatoes, halved
- ½ cup seafood broth (or chicken broth)
- ¼ cup white grape juice (for a hint of sweetness)
- 2 tablespoons lemon juice
- 2 tablespoons fresh parsley, chopped
For the Chili Breadcrumbs:
- ½ cup panko breadcrumbs
- 1 tablespoon olive oil
- ½ teaspoon red pepper flakes
- ½ teaspoon garlic powder
- ¼ teaspoon salt
Instructions
Step 1: Cook the Pasta
- Bring a large pot of salted water to a boil and cook spaghetti until al dente. Reserve ½ cup of pasta water, then drain and set aside.
Step 2: Make the Chili Breadcrumbs
- Heat 1 tablespoon olive oil in a small pan over medium heat.
- Add panko breadcrumbs, red pepper flakes, garlic powder, and salt. Stir frequently until golden brown, about 2-3 minutes. Set aside.
Step 3: Cook the Lobster
- In a large skillet, heat olive oil and 1 tablespoon butter over medium heat.
- Add the lobster pieces, season with salt and black pepper, and sauté for 3-4 minutes until opaque and cooked through. Remove from the skillet and set aside.
Step 4: Make the Sauce
- In the same skillet, melt the remaining butter and add garlic and red pepper flakes. Sauté for 30 seconds until fragrant.
- Add cherry tomatoes and cook until they soften, about 2 minutes.
- Pour in seafood broth and white grape juice, stirring to combine. Let simmer for 2-3 minutes.
- Stir in lemon juice and return the cooked lobster to the skillet.
Step 5: Combine Everything
- Add the drained pasta to the skillet along with a splash of reserved pasta water. Toss well to coat in the sauce.
- Stir in chopped parsley and adjust seasoning as needed.
Step 6: Serve and Garnish
- Divide the lobster spaghetti among plates and sprinkle generously with crispy chili breadcrumbs.
- Serve immediately with extra lemon wedges on the side.
Notes
- Use Fresh Lobster if Possible: It has the best flavor and texture. If using frozen lobster, thaw it completely before cooking.
- Don’t Overcook the Lobster: It should be tender, not rubbery.
- Make it Extra Creamy: Stir in a splash of heavy cream or a dollop of mascarpone cheese for a richer sauce.
