  • 8 oz cooked lobster meat, chopped (about 2 lobster tails)
  • 4 slices of hearty bread (sourdough or brioche work great)
  • 2 tablespoons unsalted butter, softened
  • 4 oz sharp cheddar cheese, shredded
  • 4 oz mozzarella or Gruyère cheese, shredded
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard (optional, for a slight tang)
  • 1/2 teaspoon garlic powder
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)

Instructions

Step 1: Prepare the Lobster Filling

  1. In a mixing bowl, combine the chopped lobster meat, mayonnaise, Dijon mustard (if using), and garlic powder. Mix well and set aside.

Step 2: Assemble the Sandwich
2. Spread softened butter evenly on one side of each slice of bread.
3. On the unbuttered side of two slices, layer half of the shredded cheddar and mozzarella cheese.
4. Spoon the lobster mixture evenly over the cheese layers.
5. Top with the remaining cheese, then place the other slices of bread on top, buttered side facing outward.

Step 3: Cook the Sandwich
6. Heat a non-stick skillet or griddle over medium-low heat.
7. Place the sandwiches in the skillet and cook for 3-4 minutes on each side, pressing gently with a spatula, until the bread is golden brown and crispy and the cheese is melted.
8. Lower the heat if needed to prevent burning while ensuring the cheese fully melts.

Step 4: Garnish and Serve
9. Remove the sandwiches from the skillet and let them cool slightly.
10. Sprinkle with fresh parsley for a pop of color and serve immediately.
