Ingredients
Scale
- 1 cup (2 sticks) unsalted butter, softened: For that signature buttery texture.
- 1/2 cup granulated sugar: Sweetens the cookies just enough.
- 1 tablespoon lemon zest: Adds a fresh citrus flavor.
- 2 tablespoons lemon juice: Enhances the lemony goodness.
- 2 cups all-purpose flour: The base of the shortbread.
- 1/4 teaspoon salt: Balances the sweetness.
- Optional: Powdered sugar for dusting: Adds a pretty finishing touch.
Instructions
Step 1: Prepare the Dough
- In a large mixing bowl, cream the softened butter and sugar together until light and fluffy.
- Mix in the lemon zest and lemon juice, ensuring they are evenly incorporated.
- Gradually add the flour and salt, mixing until a soft dough forms.
Step 2: Chill the Dough
- Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes. This makes the dough easier to work with.
Step 3: Roll and Shape
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Roll out the chilled dough on a lightly floured surface to about 1/4-inch thickness.
- Use cookie cutters or a knife to cut the dough into desired shapes. Transfer the cookies to the prepared baking sheet.
Step 4: Bake
- Bake in the preheated oven for 10-12 minutes, or until the edges are just lightly golden.
- Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Step 5: Optional Finishing Touch
- Once cooled, dust the cookies with powdered sugar for a beautiful presentation.
Notes
- Don’t Skip the Chill: Chilling the dough prevents spreading and helps maintain the cookie shape during baking.
- Use Fresh Lemons: Freshly grated zest and juice make a noticeable difference in flavor.
- Customize Shapes: Get creative with cookie cutters for seasonal or themed designs.
- Add a Glaze: Drizzle a simple lemon glaze (powdered sugar + lemon juice) over the cookies for extra zing.
