Instructions
Step 1: Mix the Dry Ingredients
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and lemon zest.
Step 2: Combine Wet Ingredients
- In a separate bowl, whisk the eggs, milk, mascarpone cheese, melted butter, lemon juice, and vanilla extract until smooth.
Step 3: Make the Batter
- Gradually pour the wet ingredients into the bowl of dry ingredients, mixing gently until just combined. Be careful not to overmix—some lumps are fine.
Step 4: Cook the Pancakes
- Heat a lightly greased griddle or non-stick skillet over medium heat.
- Pour ¼ cup of batter onto the pan for each pancake. Cook for 2-3 minutes or until you see bubbles form on the surface and the edges look set.
- Flip and cook for another 1-2 minutes until golden brown. Repeat with the remaining batter.
