- 1 cup buttermilk: At room temperature.
For the Lemon Glaze (Optional):
- 1 cup powdered sugar
- 2–3 tablespoons fresh lemon juice
- 1/2 teaspoon vanilla extract
Instructions
Step 1: Preheat the Oven
- Preheat your oven to 350°F (175°C).
- Grease your cake pan and line the bottom with parchment paper for easy removal.
Step 2: Prepare the Dry Ingredients
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, and lavender. Set aside.
Step 3: Cream the Butter and Sugar
- In another bowl, cream the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
- Beat in the eggs, one at a time, followed by the lemon zest and juice.
Step 4: Combine Wet and Dry Ingredients
- Gradually add the dry ingredients to the wet mixture, alternating with buttermilk. Start and end with the dry ingredients, mixing just until combined.
Step 5: Bake the Cake
- Pour the batter into the prepared pan and smooth the top.
- Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Step 6: Add the Lemon Glaze (Optional)
- Whisk together powdered sugar, lemon juice, and vanilla extract to create a smooth glaze.
- Drizzle the glaze over the cooled cake and allow it to set before serving.
