Instructions

Step 1: Sauté the Vegetables

  1. Heat olive oil in a large pot over medium heat.
  2. Add the onion, carrots, celery, and garlic. Sauté for 5-7 minutes until the vegetables are softened and fragrant.

Step 2: Build the Broth

  1. Pour in the chicken broth and bring to a boil.
  2. Add the rice (or orzo) and cook for 10-12 minutes, or until tender.

Step 3: Prepare the Lemon-Egg Mixture

  1. In a bowl, whisk together the eggs, lemon juice, and lemon zest.
  2. Slowly ladle about 1 cup of the hot broth into the egg mixture while whisking constantly. This tempers the eggs, preventing them from curdling.
