    • 1 ½ cups all-purpose flour
    • 1 teaspoon baking powder
    • ½ teaspoon baking soda
    • ¼ teaspoon salt
    • ½ cup plain yogurt (Greek or regular)

    • 1 teaspoon vanilla extract
    • 1 teaspoon lemon zest
    • 2 tablespoons fresh lemon juice
    • ½ cup vegetable oil
    • 1 cup fresh or frozen blueberries (tossed in 1 tablespoon flour to prevent sinking)
  • For the Lemon Glaze (Optional):
    • ½ cup powdered sugar
    • 12 tablespoons fresh lemon juice

Instructions

Step 1: Preheat the Oven and Prepare the Pan

  1. Preheat your oven to 350°F (175°C).
  2. Grease and line a loaf pan with parchment paper, leaving overhang for easy removal.

Step 2: Combine Dry Ingredients

  1. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Step 3: Mix Wet Ingredients

  1. In a large mixing bowl, whisk together the yogurt, sugar, eggs, vanilla extract, lemon zest, and lemon juice until smooth.
  2. Gradually add the vegetable oil while whisking until well combined.

Step 4: Combine Wet and Dry Ingredients

  1. Add the dry ingredients to the wet ingredients in three parts, gently folding with a spatula until just combined. Be careful not to overmix.
  2. Fold in the blueberries coated in flour.

Step 5: Bake the Loaf

  1. Pour the batter into the prepared loaf pan and smooth the top.
  2. Bake for 50-55 minutes, or until a toothpick inserted in the center comes out clean.
  3. Allow the loaf to cool in the pan for 10 minutes, then transfer to a cooling rack.

Step 6: Make the Lemon Glaze (Optional)

  1. In a small bowl, whisk together powdered sugar and lemon juice until smooth.
  2. Drizzle the glaze over the cooled loaf.

Notes

  • Use Fresh Lemons: Fresh lemon juice and zest add the best flavor. Avoid bottled lemon juice if possible.
  • Prevent Sinking Blueberries: Tossing the blueberries in flour keeps them evenly distributed in the batter.
  • Check for Doneness: Insert a toothpick into the center of the loaf; if it comes out clean or with just a few crumbs, it’s ready.
