For the Asparagus:

  • Fresh Asparagus (1 bunch, trimmed) – Tender and crisp.
  • Olive Oil (1 tbsp) – For roasting or sautéing.
  • Garlic (1 clove, minced) – Adds a boost of flavor.
  • Salt & Pepper (to taste) – Simple seasoning.
  • Lemon Zest (1 tsp, optional) – Brightens up the asparagus.

Instructions

Step 1: Prepare the Mashed Potatoes

  1. Bring a pot of salted water to a boil. Add the cubed potatoes and cook until fork-tender (about 15 minutes).
  2. Drain and mash the potatoes with butter, heavy cream, garlic powder, salt, and pepper. Set aside and keep warm.

Step 2: Cook the Lamb Chops

  1. Pat the lamb chops dry with a paper towel and season both sides with salt and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add lamb chops and sear for 3-4 minutes per side until golden brown.
