Ingredients
For the Phyllo Crust:
- Phyllo Dough (10 sheets, thawed)
- Unsalted Butter (½ cup, melted)
For the Pistachio Filling:
- Pistachios (1 ½ cups, finely chopped)
- Cinnamon (1 tsp)
- Nutmeg (½ tsp)
- Honey (¼ cup)
For the Cheesecake Filling:
- Cream Cheese (16 oz, softened)
- Greek Yogurt (½ cup) – Adds creaminess.
- Granulated Sugar (½ cup)
- Honey (¼ cup) – For extra richness.
- Eggs (2 large)
- Vanilla Extract (1 tsp)
For the Honey Syrup:
- Honey (½ cup)
- Water (¼ cup)
- Lemon Juice (1 tbsp)
- Cinnamon Stick (1 small)
Instructions
Step 1: Prepare the Phyllo Crust
Preheat oven to 325°F (160°C). Brush a springform pan with melted butter. Layer phyllo sheets, brushing each with butter, and gently press into the pan, allowing edges to hang over.
Step 2: Make the Pistachio Filling
In a bowl, mix chopped pistachios, cinnamon, nutmeg, and honey. Spread half of this mixture over the phyllo crust.
Step 3: Make the Cheesecake Filling
Beat cream cheese, yogurt, sugar, and honey until smooth. Add eggs one at a time, then mix in vanilla extract. Pour half of the batter over the pistachio layer.
Step 4: Add More Layers
Sprinkle the remaining pistachio mixture over the cheesecake layer, then pour the remaining cheesecake batter on top.
Step 5: Bake to Perfection
Bake for 50–55 minutes until the center is set. Let cool at room temperature, then refrigerate for at least 4 hours (or overnight).
Step 6: Make the Honey Syrup
In a saucepan, simmer honey, water, lemon juice, and a cinnamon stick for 5 minutes. Remove cinnamon stick and let cool.
Step 7: Drizzle & Serve
Once the cheesecake is fully chilled, drizzle with honey syrup and garnish with extra chopped pistachios. Slice and enjoy!
