Ingredients
For the Chicken:
- 2 boneless, skinless chicken breasts (or thighs)
- 2 tbsp olive oil
- Salt and pepper, to taste
- 2 tbsp honey
- 1 tsp black pepper (freshly ground)
- 1 tbsp soy sauce (or coconut aminos for a gluten-free option)
- 1 tbsp apple cider vinegar
For the Mac and Cheese:
- 8 oz elbow macaroni (or your favorite pasta)
- 2 tbsp unsalted butter
- 2 tbsp all-purpose flour
- 2 cups whole milk
- 1 cup shredded sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp onion powder
- ¼ tsp paprika (optional, for extra flavor)
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
Step 1: Cook the Chicken
- Heat olive oil in a large skillet over medium-high heat.
- Season the chicken breasts with salt and pepper on both sides.
- Place the chicken in the skillet and cook for 6-7 minutes per side or until fully cooked (internal temperature of 165°F/74°C).
- In a small bowl, whisk together honey, black pepper, soy sauce, and apple cider vinegar.
- Once the chicken is cooked, pour the honey pepper mixture over the chicken and cook for an additional 2-3 minutes, until the glaze thickens and coats the chicken.
- Remove the chicken from the skillet, let it rest for a few minutes, then slice it into strips or bite-sized pieces.
Step 2: Prepare the Mac and Cheese
- While the chicken is cooking, bring a large pot of salted water to a boil and cook the elbow macaroni according to package instructions. Drain and set aside.
- In a separate pot, melt butter over medium heat.
- Whisk in flour and cook for 1-2 minutes to form a roux.
- Gradually pour in the milk, whisking continuously to prevent lumps.
- Once the sauce thickens (about 4-5 minutes), stir in the cheddar, mozzarella, and Parmesan cheeses.
- Add the garlic powder, onion powder, paprika, and season with salt and pepper to taste. Stir until the cheese melts and the sauce is smooth.
Step 3: Combine Chicken and Mac and Cheese
- Add the cooked macaroni to the cheese sauce and stir to coat.
- Gently fold in the honey pepper chicken pieces, ensuring the chicken is evenly distributed.
- Serve the dish hot, garnished with chopped fresh parsley for a pop of color.
Notes
Don’t Overcook the Chicken – To keep it juicy and tender, make sure to cook the chicken just until it reaches the right temperature.
Use Freshly Grated Cheese – Pre-shredded cheese often contains additives that can affect the smoothness of the sauce.
Thicken the Sauce – If the cheese sauce feels too runny, let it cook a bit longer to reach your desired thickness.
