Ingredients

Scale

For the Bread:

  • 1/2 cup unsalted butter, softened: Adds richness and moisture.
  • 1/3 cup honey: For natural sweetness and flavor.
  • 1/2 cup brown sugar, packed: Enhances the sweetness with a hint of molasses.
  • 2 large eggs: Provides structure and fluffiness.
  • 1 teaspoon vanilla extract: Adds depth of flavor.
  • 1/2 cup buttermilk: Makes the bread tender and moist.
  • 1 3/4 cups all-purpose flour: The base of the bread.
  • 1 teaspoon baking powder: Helps the bread rise.
  • 1/2 teaspoon baking soda: Ensures a tender crumb.
  • 1/2 teaspoon salt: Balances the flavors.
  • 1 cup chopped pecans, toasted: The star ingredient, adding crunch and nuttiness.

For the Honey Butter Glaze:

  • 2 tablespoons unsalted butter: Melts into the glaze for a silky finish.
  • 2 tablespoons honey: For sweetness and shine.
  • 1/4 cup powdered sugar: Creates a light, slightly creamy glaze.

Instructions

  1. Toast the Pecans
    • Preheat your oven to 350°F (175°C).
    • Spread the chopped pecans on a baking sheet and toast for 5-7 minutes, stirring halfway through. Let them cool while you prepare the batter.
  2. Prepare the Bread Batter
    • In a large mixing bowl, cream the softened butter, honey, and brown sugar together until light and fluffy (about 2-3 minutes).
    • Beat in the eggs, one at a time, followed by the vanilla extract.
    • Add the buttermilk and mix until smooth.
    • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
    • Fold in the toasted pecans.
  3. Bake the Bread
    • Grease a 9×5-inch loaf pan or line it with parchment paper.
    • Pour the batter into the prepared pan and spread it evenly.
    • Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
    • Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  4. Prepare the Honey Butter Glaze
    • In a small saucepan or microwave-safe bowl, melt the butter and honey together. Whisk in the powdered sugar until smooth.
    • Drizzle the glaze over the cooled bread, letting it drip down the sides.
  5. Slice and Serve
    • Once the glaze has set, slice the bread and enjoy!

Notes

  • Use Fresh Pecans: For the best flavor, choose high-quality pecans and toast them to bring out their natural oils.
  • Don’t Overmix: Mix the batter just until combined to avoid a dense loaf.
  • Cool Before Glazing: Ensure the bread is completely cool before adding the glaze to prevent it from melting off.
  • Storage Tip: Wrap the loaf tightly in plastic wrap or foil to keep it moist.
