For the Pumpkin Cake
- 3/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg

- 1/4 teaspoon salt
- 3 large eggs
- 1 cup granulated sugar
- 2/3 cup canned pumpkin puree
- 1 teaspoon vanilla extract

- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 4 tablespoons unsalted butter, softened
- 1 teaspoon vanilla extract

Instructions
Step 1: Prepare the Cake Batter
- Preheat your oven to 375°F (190°C). Line a jelly roll pan with parchment paper and lightly grease it.
- In a bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
- In a separate large bowl, beat the eggs and sugar until thick and pale. Stir in the pumpkin puree and vanilla extract.
- Gradually fold the dry ingredients into the wet ingredients until just combined.
Step 2: Bake the Pumpkin Cake
- Spread the batter evenly into the prepared pan.
- Bake for 13-15 minutes, or until the cake springs back when lightly touched.
Step 3: Roll the Cake
- While the cake is baking, lay a clean kitchen towel on a flat surface and dust it generously with powdered sugar.
- Immediately after removing the cake from the oven, invert it onto the prepared towel. Carefully peel off the parchment paper.
- Starting from one short end, gently roll the warm cake with the towel into a tight spiral. Let it cool completely.
Step 4: Make the Cream Cheese Filling
- Beat the cream cheese, powdered sugar, butter, and vanilla extract until smooth and creamy.
Step 5: Assemble the Pumpkin Roll
- Carefully unroll the cooled cake and spread the cream cheese filling evenly over the surface.
- Re-roll the cake (without the towel) and wrap it tightly in plastic wrap. Refrigerate for at least 1 hour to set.
Step 6: Serve and Enjoy
- Dust the pumpkin roll with powdered sugar before slicing. Serve chilled or at room temperature.
