Ingredients
For the Pumpkin Cobbler:
- 1 cup all-purpose flour
- 2 tsp baking powder
- ½ cup granulated sugar
- ½ cup brown sugar
- 1 tsp cinnamon
- ½ tsp nutmeg

- ½ cup pumpkin purée
- ¼ cup milk
- 2 tbsp melted butter
- 1 tsp vanilla extract
For the Pecan Topping & Sauce:
- ½ cup chopped pecans
- ½ cup brown sugar
- 1 ½ cups hot water
- ½ tsp cinnamon
Instructions
Preheat your oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish.
In a mixing bowl, whisk together the flour, baking powder, granulated sugar, brown sugar, cinnamon, nutmeg, ginger, and salt.
In a separate bowl, combine the pumpkin purée, milk, melted butter, and vanilla extract. Stir the wet ingredients into the dry ingredients until a thick batter forms. Spread the batter evenly into the prepared baking dish.
Sprinkle the chopped pecans evenly over the batter. Then, sprinkle the brown sugar and cinnamon over the top.
Carefully pour the hot water over the entire mixture without stirring. This helps create the gooey caramel sauce as the cobbler bakes!
Place the dish in the oven and bake for 35–40 minutes, or until the top is set and golden brown. The bottom will be saucy and bubbling.
Let the cobbler cool for about 5 minutes before serving. Spoon it into bowls, making sure to scoop up the delicious caramel sauce from the bottom.
