  • 2 cups all-purpose flour

  • 1 tbsp baking powder

  • ½ tsp baking soda

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ cup cold unsalted butter, cubed

  • 1 cup cottage cheese (full-fat or low-fat)

  • ¼ cup buttermilk (or plain yogurt thinned with a bit of water)

  • 1 large egg

For the Herbs (Mix & Match Your Favorites):

  • 2 tbsp fresh chives, chopped

  • 1 tbsp fresh parsley, chopped

  • 1 tbsp fresh dill, chopped

  • 1 tsp fresh thyme leaves

Optional for Topping:

  • 1 tbsp melted butter

  • Pinch of sea salt

  • Extra chopped herbs for garnish


Instructions

Step 1: Preheat the Oven
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone mat and set aside.

Step 2: Mix Dry Ingredients
In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, black pepper, garlic powder, and onion powder. This creates the base for a flavorful biscuit.

Step 3: Cut in the Butter
Add the cold, cubed butter into the dry mix. Use a pastry cutter or fork to cut the butter into the flour until it resembles coarse crumbs. This step is key to flaky biscuits.

Step 4: Add Herbs and Cottage Cheese
Stir in the chopped herbs, then fold in the cottage cheese gently. The dough will begin to form as the cottage cheese adds moisture and creaminess.

Step 5: Add Wet Ingredients
In a small bowl, whisk together the egg and buttermilk. Pour it into the dough and mix until just combined. Do not overmix—this will keep the biscuits tender.

Step 6: Shape the Dough
Turn the dough onto a lightly floured surface and gently knead it a few times to bring it together. Pat it into a 1-inch thick round. Use a biscuit cutter or a glass to cut out rounds and place them onto the prepared baking sheet.

Step 7: Bake to Golden Perfection

Step 8: Add Finishing Touches
Remove from oven and brush the tops with melted butter. Sprinkle with extra herbs or a pinch of sea salt if desired. Let them cool slightly on a rack before serving.
