Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon garlic powder (optional)
- 1/4 cup cold unsalted butter, cut into small pieces
- 1 cup cottage cheese (small curd works best)
- 1/4 cup milk (or more if needed)
- 2 tablespoons fresh parsley, finely chopped
- 1 tablespoon fresh chives, finely chopped
- 1 teaspoon fresh thyme leaves (optional)
- Melted butter, for brushing (optional)
Instructions
Step 1: Preheat the Oven
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
Step 2: Mix the Dry Ingredients
2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and garlic powder (if using).
Step 3: Cut in the Butter
3. Add the cold butter pieces to the dry ingredients. Use a pastry cutter or fork to cut the butter into the flour until the mixture resembles coarse crumbs.
Step 4: Add the Wet Ingredients
4. Stir in the cottage cheese, milk, and fresh herbs until a soft dough forms. Add an extra tablespoon of milk if the dough seems too dry.
Step 5: Shape the Dough
5. Turn the dough out onto a floured surface and gently knead it 3-4 times to bring it together.
6. Pat or roll the dough to about 1-inch thickness. Use a round cutter or a glass to cut out biscuits. Re-roll the scraps as needed.
Step 6: Bake the Biscuits
7. Place the biscuits on the prepared baking sheet, about 1 inch apart. Brush the tops with melted butter if desired.
8. Bake for 12-15 minutes, or until the tops are golden brown.
Step 7: Serve Warm
9. Remove from the oven and let cool slightly. Serve warm with butter, honey, or as a side to your favorite meal.
Notes
- Keep the Butter Cold: Cold butter creates pockets of steam, making the biscuits flaky.
- Don’t Overmix: Overworking the dough can make the biscuits tough. Handle it gently!
- Customize the Herbs: Swap or add other fresh herbs like dill, rosemary, or basil.
- Use Full-Fat Cottage Cheese: For the richest flavor and texture, opt for full-fat cottage cheese.
