  • 1 small onion, finely chopped: Adds sweetness and depth to the beef mixture.

  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 2 cups shredded cheese: Cheddar, Monterey Jack, or a blend.
  • 8 large flour tortillas: Soft and pliable for easy rolling.
  • 2 cups enchilada sauce: Store-bought or homemade.
  • 1 tablespoon vegetable oil: For cooking the beef.
  • Optional toppings: Sour cream, chopped cilantro, sliced jalapeños, diced tomatoes, or sliced avocado.

Instructions

Step 1: Cook the Beef Filling

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the ground beef and cook until browned, breaking it up with a wooden spoon.
  3. Stir in the onion and garlic, cooking until softened, about 2-3 minutes.
  4. Mix in the chili powder, cumin, paprika, salt, and pepper. Stir to combine and cook for another minute.
  5. Remove the skillet from heat and let the filling cool slightly.

Step 2: Assemble the Enchiladas
6. Preheat your oven to 375°F (190°C).
7. Spread ½ cup of enchilada sauce on the bottom of a baking dish.
8. Lay out a tortilla and spoon about 3 tablespoons of the beef mixture down the center. Sprinkle with cheese.
9. Roll the tortilla tightly and place it seam-side down in the baking dish. Repeat with the remaining tortillas.

Step 3: Add Sauce and Cheese
10. Pour the remaining enchilada sauce over the rolled tortillas, ensuring they’re evenly covered.
11. Sprinkle the rest of the shredded cheese over the top.

Step 4: Bake and Serve
12. Cover the dish with foil and bake for 20 minutes.
13. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
14. Remove from the oven and let cool for a few minutes before serving.

Notes

  • Warm the Tortillas: Heat them in a dry skillet or microwave to make them pliable and easier to roll.
  • Make It Ahead: Prepare the enchiladas up to the baking step, cover, and refrigerate for up to 24 hours. Bake when ready to serve.
