For the Creamy Dill Yogurt Sauce:
- 1 cup plain Greek yogurt
- 2 tablespoons fresh dill, finely chopped
- 1 tablespoon lemon juice
- 1 teaspoon garlic, minced
- Salt and pepper, to taste
Instructions
Step 1: Prep the Ingredients
- Preheat your grill or grill pan to medium-high heat.
- In a large bowl, toss the salmon cubes, bell peppers, and onion with olive oil, garlic powder, smoked paprika, cumin, salt, and pepper.
Step 2: Assemble the Skewers
- Thread the salmon, bell peppers, and onion alternately onto the skewers, leaving a little space between each piece for even cooking.
Step 3: Grill the Skewers
- Place the skewers on the grill and cook for 2-3 minutes per side, or until the salmon is cooked through and has nice grill marks.
Step 4: Make the Dill Yogurt Sauce
- While the skewers are grilling, whisk together the Greek yogurt, dill, lemon juice, garlic, salt, and pepper in a small bowl.
Step 5: Serve and Enjoy
- Serve the salmon skewers hot with the creamy dill yogurt sauce on the side for dipping.
Notes
- Soak Wooden Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- Cut Uniformly: Keep salmon and veggies uniform in size to ensure even cooking.
- Don’t Overcook: Salmon cooks quickly, so watch closely to prevent it from drying out.
