Ingredients

  • 1 lb salmon fillet, cut into 1-inch cubes
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 small red onion, cut into chunks
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • Salt and pepper, to taste
  • Wooden or metal skewers (soaked in water if wooden)

For the Creamy Dill Yogurt Sauce:

  • 1 cup plain Greek yogurt
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic, minced
  • Salt and pepper, to taste

Instructions

Step 1: Prep the Ingredients

  1. Preheat your grill or grill pan to medium-high heat.
  2. In a large bowl, toss the salmon cubes, bell peppers, and onion with olive oil, garlic powder, smoked paprika, cumin, salt, and pepper.

Step 2: Assemble the Skewers

  1. Thread the salmon, bell peppers, and onion alternately onto the skewers, leaving a little space between each piece for even cooking.

Step 3: Grill the Skewers

  1. Place the skewers on the grill and cook for 2-3 minutes per side, or until the salmon is cooked through and has nice grill marks.

Step 4: Make the Dill Yogurt Sauce

  1. While the skewers are grilling, whisk together the Greek yogurt, dill, lemon juice, garlic, salt, and pepper in a small bowl.

Step 5: Serve and Enjoy

  1. Serve the salmon skewers hot with the creamy dill yogurt sauce on the side for dipping.
