Instructions
Step 1: Prepare the Lobster Tails
- Using kitchen scissors, cut through the top of the lobster shell lengthwise to the tail fin. Gently loosen the meat from the shell without detaching it, and lift it out slightly for easy skewering.
- Slice the lobster meat into chunks, leaving it partially connected for presentation if desired.
Step 2: Skewer the Lobster
- Thread the lobster chunks onto skewers. Drizzle with olive oil, then sprinkle with smoked paprika, salt, and pepper.
Step 3: Make the Garlic Butter
- In a small bowl, combine melted butter, garlic, lemon juice, parsley, and chili flakes (if using). Set aside a portion for basting and reserve the rest for serving.
Step 4: Grill the Lobster
- Preheat your grill or grill pan to medium-high heat.
- Place the lobster skewers on the grill and cook for 3-4 minutes per side, basting with the garlic butter as they cook. The lobster is done when it’s opaque and firm to the touch.
Step 5: Serve
