- Salt and pepper, to taste
Instructions
Step 1: Cook the Orzo
- Bring a medium pot of salted water to a boil and cook the orzo according to package instructions.
- Drain and rinse with cold water to stop the cooking process. Set aside.
Step 2: Marinate and Grill the Shrimp
- In a bowl, toss the shrimp with olive oil, oregano, garlic powder, salt, and pepper.
- Preheat a grill or grill pan over medium heat. Cook the shrimp for 2-3 minutes per side until pink and slightly charred. Set aside to cool slightly.
Step 3: Prepare the Dressing
- In a small bowl, whisk together olive oil, lemon juice, red wine vinegar, minced garlic, Dijon mustard, oregano, salt, and pepper. Adjust seasoning to taste.
Step 4: Assemble the Salad
