For the Dressing

  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice

  • 1 clove garlic, minced
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon dried oregano
  • Salt and pepper, to taste

Instructions

Step 1: Cook the Orzo

  1. Bring a medium pot of salted water to a boil and cook the orzo according to package instructions.
  2. Drain and rinse with cold water to stop the cooking process. Set aside.

Step 2: Marinate and Grill the Shrimp

  1. In a bowl, toss the shrimp with olive oil, oregano, garlic powder, salt, and pepper.
  2. Preheat a grill or grill pan over medium heat. Cook the shrimp for 2-3 minutes per side until pink and slightly charred. Set aside to cool slightly.

Step 3: Prepare the Dressing

  1. In a small bowl, whisk together olive oil, lemon juice, red wine vinegar, minced garlic, Dijon mustard, oregano, salt, and pepper. Adjust seasoning to taste.

Step 4: Assemble the Salad

  1. In a large mixing bowl, combine the cooked orzo, cucumber, cherry tomatoes, red onion, Kalamata olives, feta cheese, and parsley.
  2. Add the grilled shrimp and drizzle with the dressing. Toss gently to combine.

Step 5: Chill and Serve
