For the Chicken Marinade:
- 1 lb chicken thighs or breast, cut into strips
- 3 tablespoons olive oil
- 3 tablespoons Greek yogurt
- 3 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- Salt and pepper, to taste
For the Gyros:
- 4 pita bread or flatbreads
- 1 cup lettuce, shredded
- 1 cup cucumber, diced
- 1 cup tomatoes, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup crumbled feta cheese (optional)
For the Tzatziki Sauce:
- 1 cup Greek yogurt
- 1/2 cucumber, grated and squeezed to remove excess water
- 1 clove garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon lemon juice
- 1 tablespoon fresh dill, chopped (or 1/2 teaspoon dried dill)
- Salt and pepper, to taste
Instructions
Step 1: Marinate the Chicken
- In a large bowl, combine olive oil, Greek yogurt, garlic, lemon juice, oregano, paprika, cumin, salt, and pepper.
- Add the chicken strips, tossing to coat them evenly.
- Cover and refrigerate for at least 30 minutes, or up to 24 hours for the best flavor.
Step 2: Prepare the Tzatziki Sauce
- In a bowl, combine Greek yogurt, grated cucumber, garlic, olive oil, lemon juice, dill, salt, and pepper.
- Mix well and refrigerate until ready to use.
Step 3: Cook the Chicken
- Heat a grill pan or skillet over medium-high heat and cook the marinated chicken strips for 4-5 minutes on each side, or until fully cooked. Remove from heat.
Step 4: Assemble the Gyros
- Warm the pita bread in a dry skillet or microwave.
- Spread a generous amount of tzatziki sauce on each pita.
- Add lettuce, cucumber, tomatoes, red onion, and cooked chicken.
- Sprinkle with feta cheese (if using) and wrap the pita around the filling.
Step 5: Serve and Enjoy
- Serve immediately with extra tzatziki sauce on the side.
