- Unsalted Butter (½ cup, softened) – Adds richness.
- Granulated Sugar (½ cup) – For the perfect sweetness.
- Brown Sugar (¼ cup, packed) – Enhances the chewiness.
- Egg (1 large) – Helps bind everything together.
- Vanilla Extract (1 tsp) – Adds warmth and depth.
- All-Purpose Flour (1 ½ cups) – The base for the dough.
- Baking Powder (½ tsp) – Helps the cookies rise.
- Salt (¼ tsp) – Enhances flavor.
- Cornstarch (1 tsp) – Keeps the cookies soft.
Mix-Ins:
- Reese’s Peanut Butter Cups (1 cup, chopped) – The star ingredient!
- Mini Chocolate Chips (½ cup) – For extra chocolatey goodness.
Instructions
Step 1: Prepare the Dough
- In a large mixing bowl, beat cream cheese and butter together until smooth.
- Add granulated sugar and brown sugar and mix until light and fluffy.
- Beat in the egg and vanilla extract until combined.
Step 2: Mix the Dry Ingredients
- In a separate bowl, whisk together flour, baking powder, salt, and cornstarch.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Step 3: Fold in the Good Stuff
- Gently fold in the chopped Reese’s peanut butter cups and mini chocolate chips.
Step 4: Chill the Dough
- Cover the dough and refrigerate for 30 minutes. This helps keep the cookies thick and chewy.
Step 5: Bake the Cookies
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Scoop tablespoon-sized balls of dough onto the sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are set but the centers are still slightly soft.
Step 6: Cool & Enjoy!
- Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack.
- Enjoy warm for the ultimate gooey texture!
Notes
- Don’t Overbake – The centers should look slightly underdone when you take them out.
- Chill the Dough – This helps prevent the cookies from spreading too much.
- Use Fresh Reese’s – Fresh peanut butter cups melt beautifully into the cookies.
