  • 4 large eggs

  • 1 cup chopped pecans, toasted

For the Ganache

  • 1 cup semisweet chocolate chips
  • 1/2 cup heavy cream

For Garnish

  • Additional caramel sauce
  • Chopped pecans

Instructions

Step 1: Preheat and Prepare

  1. Preheat your oven to 375°F (190°C).
  2. Line a jelly roll pan with parchment paper and lightly grease it.

Step 2: Make the Cake Batter

  1. In a bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  2. In a separate bowl, beat the eggs, granulated sugar, brown sugar, and vanilla extract until light and fluffy, about 3-4 minutes.
  3. Gently fold the dry ingredients into the wet ingredients until combined.

Step 3: Bake the Cake

  1. Pour the batter into the prepared pan and spread evenly.
  2. Bake for 10-12 minutes, or until the cake springs back when lightly touched.

Step 4: Roll the Cake

  1. While the cake is warm, turn it out onto a clean kitchen towel dusted with cocoa powder. Peel off the parchment paper.
  2. Roll the cake up with the towel (starting from the short side) and let it cool completely.

Step 5: Fill the Cake

  1. Once cooled, carefully unroll the cake. Spread the caramel sauce evenly over the surface, leaving a 1-inch border.
  2. Sprinkle with the toasted pecans.
  3. Roll the cake back up (without the towel) and place it seam-side down on a serving plate.

Step 6: Make the Ganache

  1. In a microwave-safe bowl, combine the chocolate chips and heavy cream. Microwave in 20-second intervals, stirring each time, until smooth and glossy.
  2. Pour the ganache over the cake roll, spreading it evenly.

Step 7: Garnish and Chill

  1. Drizzle additional caramel sauce over the ganache and sprinkle with chopped pecans.
  2. Refrigerate for at least 1 hour before serving to set the ganache.
