Instructions
Step 1: Preheat and Prepare
- Preheat your oven to 375°F (190°C).
- Line a jelly roll pan with parchment paper and lightly grease it.
Step 2: Make the Cake Batter
- In a bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- In a separate bowl, beat the eggs, granulated sugar, brown sugar, and vanilla extract until light and fluffy, about 3-4 minutes.
- Gently fold the dry ingredients into the wet ingredients until combined.
Step 3: Bake the Cake
- Pour the batter into the prepared pan and spread evenly.
- Bake for 10-12 minutes, or until the cake springs back when lightly touched.
Step 4: Roll the Cake
- While the cake is warm, turn it out onto a clean kitchen towel dusted with cocoa powder. Peel off the parchment paper.
- Roll the cake up with the towel (starting from the short side) and let it cool completely.
Step 5: Fill the Cake
- Once cooled, carefully unroll the cake. Spread the caramel sauce evenly over the surface, leaving a 1-inch border.
- Sprinkle with the toasted pecans.
- Roll the cake back up (without the towel) and place it seam-side down on a serving plate.
Step 6: Make the Ganache
- In a microwave-safe bowl, combine the chocolate chips and heavy cream. Microwave in 20-second intervals, stirring each time, until smooth and glossy.
- Pour the ganache over the cake roll, spreading it evenly.
Step 7: Garnish and Chill
- Drizzle additional caramel sauce over the ganache and sprinkle with chopped pecans.
- Refrigerate for at least 1 hour before serving to set the ganache.
Notes
- Work Quickly: Roll the cake while it’s still warm to prevent cracks.
- Toast the Pecans: Toasting enhances their flavor and adds a nice crunch.
- Use High-Quality Chocolate: This makes a big difference in the ganache.
- Make Ahead: Prepare the cake roll a day in advance and store it in the fridge until ready to serve.
