  • Salt and pepper: To taste.
  • 2 cups spinach or kale (optional): For a touch of green and added nutrients.

Instructions

Step 1: Sear the Steak

  1. Heat olive oil in a large pot over medium-high heat.
  2. Season the steak cubes with salt and pepper.
  3. Add the steak to the pot in batches to avoid overcrowding and sear until browned on all sides. Remove and set aside.

Step 2: Sauté Aromatics and Mushrooms

  1. In the same pot, add butter and diced onions. Sauté for 3-4 minutes until softened.
  2. Add garlic and cook for another minute until fragrant.
  3. Stir in the sliced mushrooms and cook for 5-7 minutes until they release their moisture and begin to brown.

Step 3: Build the Soup

  1. Pour in the beef broth and water, scraping the bottom of the pot to deglaze and release flavorful bits.
  2. Add Worcestershire sauce, thyme, smoked paprika, and any additional salt or pepper as needed.
  3. Bring the soup to a gentle boil, then reduce heat to a simmer.

Step 4: Simmer and Serve

  1. Return the seared steak to the pot and simmer for 10-15 minutes until the steak is tender.
  2. If using spinach or kale, stir it in during the last 5 minutes of cooking.
  3. Taste and adjust seasoning as needed.
