Scale
- 1 lb steak (sirloin or tenderloin): Cut into bite-sized cubes.
- 1 tablespoon olive oil: For searing the steak.
- 1 tablespoon butter: Adds richness to the soup.
- 1 medium onion: Diced for sweetness and depth.
- 6 cloves garlic: Minced for bold, aromatic flavor.
- 8 oz mushrooms: Sliced (baby bella or button mushrooms work well).
- 4 cups beef broth: The base of the soup.
- 1 cup water: To adjust the consistency.
- 1 teaspoon Worcestershire sauce: Enhances the savory flavor.
- 1 teaspoon dried thyme: For a subtle earthy note.
- 1/2 teaspoon smoked paprika: Adds a hint of smokiness.
- Salt and pepper: To taste.
- 2 cups spinach or kale (optional): For a touch of green and added nutrients.
Instructions
Step 1: Sear the Steak
- Heat olive oil in a large pot over medium-high heat.
- Season the steak cubes with salt and pepper.
- Add the steak to the pot in batches to avoid overcrowding and sear until browned on all sides. Remove and set aside.
Step 2: Sauté Aromatics and Mushrooms
- In the same pot, add butter and diced onions. Sauté for 3-4 minutes until softened.
- Add garlic and cook for another minute until fragrant.
- Stir in the sliced mushrooms and cook for 5-7 minutes until they release their moisture and begin to brown.
Step 3: Build the Soup
- Pour in the beef broth and water, scraping the bottom of the pot to deglaze and release flavorful bits.
- Add Worcestershire sauce, thyme, smoked paprika, and any additional salt or pepper as needed.
- Bring the soup to a gentle boil, then reduce heat to a simmer.
Step 4: Simmer and Serve
- Return the seared steak to the pot and simmer for 10-15 minutes until the steak is tender.
- If using spinach or kale, stir it in during the last 5 minutes of cooking.
- Taste and adjust seasoning as needed.
Notes
- Use Quality Steak: Opt for tender cuts like sirloin or tenderloin for the best texture.
- Don’t Skip Searing: This step adds depth and a rich, caramelized flavor to the soup.
- Customize Veggies: Add carrots, celery, or potatoes for more variety.
- Make it Creamy: Stir in a splash of heavy cream or coconut milk for a richer soup.
