Ingredients
- 1.5 lbs boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 3 tablespoons olive oil
- 3 garlic cloves, minced
- 1/4 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon red pepper flakes (optional, for a hint of heat)
- Salt and pepper, to taste
- 2 tablespoons chopped fresh parsley, for garnish
- Wooden or metal skewers
Instructions
Step 1: Prepare the Marinade
- In a large mixing bowl, combine olive oil, minced garlic, Parmesan cheese, Italian seasoning, smoked paprika, salt, and pepper. Mix well to form a thick marinade.
Step 2: Marinate the Chicken
2. Add the chicken pieces to the bowl and toss to coat evenly.
3. Cover the bowl and let the chicken marinate for at least 30 minutes, or up to 2 hours in the refrigerator for deeper flavor.
Step 3: Assemble the Skewers
4. Thread the marinated chicken pieces onto skewers, leaving a little space between each piece for even cooking.
Step 4: Grill the Skewers
5. Preheat your grill or grill pan over medium-high heat.
6. Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is golden brown and cooked through (internal temperature should reach 165°F/74°C).
Step 5: Garnish and Serve
7. Remove the skewers from the grill and sprinkle with chopped fresh parsley and a little extra Parmesan cheese for garnish.
8. Serve warm with your favorite dipping sauce or side dishes.
Notes
- Soak Wooden Skewers: If using wooden skewers, soak them in water for 30 minutes before threading the chicken to prevent burning.
- Don’t Overcook: Use a meat thermometer to ensure the chicken stays juicy and doesn’t dry out.
- Customize the Flavor: Add a squeeze of fresh lemon juice over the cooked skewers for a zesty finish.
