Ingredients
For the Steak Bites:
- 1 lb sirloin or ribeye steak (cut into 1-inch cubes)
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon smoked paprika
- ½ teaspoon garlic powder
- 1 tablespoon olive oil
- 3 tablespoons butter
- 4 cloves garlic (minced)
- 1 teaspoon Worcestershire sauce
- 1 tablespoon fresh parsley (chopped)
For the Gravy:
- 2 tablespoons butter
- 1 tablespoon all-purpose flour
- 1 cup beef broth
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- Salt & black pepper to taste
For the Mashed Sweet Potatoes:
- 2 large sweet potatoes (peeled & cubed)
- 2 tablespoons butter
- ¼ cup milk (or heavy cream)
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
Place the cubed sweet potatoes in a pot of boiling salted water. Cook for 12-15 minutes until fork-tender. Drain and return to the pot.
Mash the sweet potatoes with butter, milk, salt, and black pepper until smooth. Cover to keep warm.
In a bowl, toss the steak cubes with salt, black pepper, smoked paprika, and garlic powder.
Heat olive oil in a large skillet over medium-high heat. Add steak bites in a single layer and sear for 2-3 minutes per side until browned. Remove from the skillet and set aside.
Reduce heat to medium-low. In the same skillet, add butter and minced garlic. Cook for 30 seconds until fragrant. Stir in Worcestershire sauce and fresh parsley. Return the steak bites to the skillet and toss to coat. Remove from heat.
In a separate small saucepan, melt butter over medium heat. Whisk in the flour and cook for 1 minute until golden. Slowly whisk in the beef broth, stirring continuously to prevent lumps. Add garlic powder, onion powder, salt, and black pepper. Simmer for 3-4 minutes until thickened.
Spoon mashed sweet potatoes onto plates. Top with the garlic butter steak bites and drizzle with the rich gravy. Garnish with extra parsley if desired.
