For the Pasta:

  • 12 oz linguine or spaghetti
  • 1 tablespoon olive oil (for cooking the pasta)
  • Salt (for the pasta water)

For the Shrimp Scampi:

  • 1 lb large shrimp, peeled and deveined
  • 3 tablespoons unsalted butter
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • ½ teaspoon red pepper flakes (optional)
  • ½ cup chicken broth
  • 2 tablespoons fresh lemon juice
  • ¼ cup fresh parsley, chopped
  • Salt and pepper, to taste

Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil. Add the linguine and cook according to the package instructions until al dente.
  2. Reserve ½ cup of pasta water, then drain the pasta and toss it with a tablespoon of olive oil to prevent sticking.

Step 2: Sauté the Shrimp

  1. Heat the butter and olive oil in a large skillet over medium heat.
  2. Add the minced garlic and red pepper flakes (if using) and cook for 1-2 minutes until fragrant.
  3. Add the shrimp in a single layer. Cook for 2-3 minutes per side, or until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set aside.

Step 3: Make the Scampi Sauce

  1. In the same skillet, pour in the chicken broth and lemon juice, scraping the bottom of the pan to deglaze it. Let it simmer for 2-3 minutes to reduce slightly.
  2. Stir in half of the chopped parsley and season with salt and pepper.

Step 4: Combine and Serve

  1. Return the shrimp to the skillet and toss to coat in the sauce.
  2. Add the cooked linguine to the skillet, tossing everything together. If the pasta seems dry, add a splash of the reserved pasta water.
  3. Garnish with the remaining parsley and serve hot.
