Ingredients
Scale
- 8 oz pasta (spaghetti, fettuccine, or penne works great)
- 2 boneless, skinless chicken breasts (cut into bite-sized pieces)
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 4 garlic cloves (minced)
- 1/2 teaspoon paprika
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon red pepper flakes (optional, for a hint of spice)
- 1/2 cup chicken broth (or water with a pinch of salt)
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley (chopped, for garnish)
Instructions
Step 1: Cook the Pasta
- Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
Step 2: Cook the Chicken
- Heat the olive oil in a large skillet over medium heat. Add the chicken pieces, seasoning with paprika, Italian seasoning, salt, and pepper. Cook for 4–5 minutes per side, or until golden and fully cooked. Remove from the skillet and set aside.
Step 3: Make the Garlic Butter Sauce
- In the same skillet, melt the butter over medium heat. Add the minced garlic and red pepper flakes (if using). Sauté for 1–2 minutes, or until fragrant.
Step 4: Combine and Finish
- Pour in the chicken broth and stir, scraping up any browned bits from the bottom of the skillet. Simmer for 2 minutes.
- Add the cooked pasta to the skillet along with the chicken. Toss everything together, adding reserved pasta water a little at a time until the sauce reaches your desired consistency.
- Stir in the Parmesan cheese and adjust seasoning with salt and pepper, if needed.
Step 5: Serve and Enjoy
- Garnish with fresh parsley and more Parmesan cheese. Serve hot and enjoy!
Notes
- Use Fresh Garlic: Freshly minced garlic gives the best flavor—don’t skimp!
- Don’t Overcook the Pasta: Al dente pasta works best for this recipe to hold up to the sauce.
- Customize It: Add veggies like spinach, mushrooms, or cherry tomatoes for extra nutrients.
