Instructions
Step 1: Preheat the Oven
- Preheat your oven to 350°F (175°C).
- Line two baking sheets with parchment paper or silicone baking mats.
Step 2: Melt the Chocolate
- In a microwave-safe bowl, combine the semisweet chocolate and butter.
- Heat in 20-second intervals, stirring between each, until smooth and fully melted. Set aside to cool slightly.
Step 3: Mix the Wet Ingredients
- In a large bowl, whisk together the eggs, granulated sugar, brown sugar, and vanilla extract until the mixture is pale and slightly thickened (about 2 minutes).
- Slowly add the melted chocolate mixture and whisk until fully combined.
Step 4: Combine the Dry Ingredients
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually fold the dry ingredients into the wet mixture until just combined. Avoid overmixing.
- If using mix-ins like chocolate chips or nuts, gently fold them in now.
Step 5: Scoop and Bake
- Use a cookie scoop or spoon to drop tablespoon-sized mounds of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are set and the tops are shiny and crackled.
- Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
