Ingredients
Scale
- 3 large eggs (separated)
- 1/2 cup cottage cheese (full-fat or low-fat, depending on preference)
- 1/4 teaspoon cream of tartar (helps stabilize the egg whites)
- 1 tablespoon cornstarch or almond flour (for structure)
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder (optional, for a savory touch)
- 1/2 teaspoon honey (optional, for a hint of sweetness)
Instructions
- Preheat the Oven
- Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper.
- Whip the Egg Whites
- In a large bowl, beat the egg whites and cream of tartar using a hand mixer on high speed until stiff peaks form. This should take about 3-5 minutes. Set aside.
- Prepare the Cottage Cheese Mixture
- In a separate bowl, mix the egg yolks, cottage cheese, cornstarch (or almond flour), salt, and any optional seasonings (garlic powder or honey). Stir until smooth and creamy.
- Combine the Mixtures
- Gently fold the whipped egg whites into the cottage cheese mixture. Use a rubber spatula to fold slowly, ensuring you don’t deflate the egg whites. The batter should be light and fluffy.
- Shape the Bread
- Spoon the mixture onto the prepared baking sheet, creating 6-8 small rounds (like dinner rolls) or 4 larger circles for sandwich-sized bread.
- Bake to Perfection
- Bake for 20-25 minutes or until the tops are golden brown and firm to the touch.
- Let the cloud bread cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
- Don’t Overmix: When folding the egg whites into the cottage cheese mixture, be gentle to keep the batter light and fluffy.
- Use Cream of Tartar: This helps stabilize the egg whites and creates that signature cloud-like texture.
- Customize the Flavor: Add a pinch of herbs, spices, or even cheese for a flavor twist.
- Store Properly: Cloud bread is best enjoyed fresh but can be stored for up to 2 days in an airtight container.
