Ingredients

For the Pie Crust:

  • Pie Crust (1, store-bought or homemade) – Buttery and flaky.

For the Filling:

  • Shrimp (1 lb, peeled, deveined, and chopped) – Fresh or frozen, cooked or raw.
  • Butter (2 tbsp) – For sautéing.
  • Onion (1 small, diced) – Adds sweetness and depth.
  • Bell Pepper (½ cup, diced) – A pop of color and crunch.
  • Celery (½ cup, diced) – Classic seafood pairing.
  • Garlic (2 cloves, minced) – Boosts the flavor.
  • All-Purpose Flour (2 tbsp) – Helps thicken the filling.
  • Milk (1 cup) – For a creamy texture.
  • Heavy Cream (½ cup) – Makes the pie extra rich.
  • Cheddar Cheese (1 cup, shredded) – Melts beautifully.
  • Old Bay Seasoning (1 tsp) – A must for seafood dishes!
  • Lemon Juice (1 tbsp) – Brightens up the flavors.
  • Fresh Parsley (2 tbsp, chopped) – Adds freshness.
  • Salt & Pepper – To taste.

Instructions

Step 1: Prepare the Pie Crust

  1. Preheat your oven to 375°F (190°C).
  2. Place the pie crust into a greased pie dish, crimp the edges, and poke the bottom with a fork.
  3. Pre-bake for 8–10 minutes until slightly golden. Set aside.

Step 2: Cook the Shrimp and Veggies

  1. In a large skillet, melt butter over medium heat.
  2. Add the diced onion, bell pepper, and celery. Sauté for 3–4 minutes until softened.
  3. Stir in the minced garlic and cook for another 30 seconds.
  4. Add the chopped shrimp and cook until they turn pink (if using raw shrimp). If using pre-cooked shrimp, warm them for 1 minute. Remove from heat.

Step 3: Make the Creamy Filling

  1. Sprinkle the flour over the shrimp mixture and stir to coat.
  2. Gradually pour in the milk and heavy cream, whisking continuously.
  3. Cook until the mixture thickens slightly (about 3 minutes).
  4. Stir in the cheddar cheese, Old Bay seasoning, lemon juice, fresh parsley, salt, and pepper. Mix until the cheese is melted and everything is well combined.

Step 4: Assemble and Bake

  1. Pour the creamy shrimp filling into the pre-baked pie crust.
  2. Bake for 20–25 minutes, or until the top is golden and slightly bubbly.
  3. Let the pie cool for at least 5 minutes before slicing.

Notes

  • Use Fresh Shrimp – If possible, fresh shrimp gives the best flavor.
  • Don’t Overcook the Shrimp – They should just turn pink and be slightly firm.
  • Let the Pie Rest – This helps the filling set before slicing.
