  • 1 lb chicken thighs or breasts (boneless, skinless; cut into bite-sized pieces)
  • 1 medium butternut squash (peeled, seeded, and cubed)
  • 1 cup uncooked quinoa (rinsed)
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 4 cups chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1/4 cup fresh parsley (chopped, for garnish)

Instructions

  1. Sauté the Aromatics
    • Heat olive oil in a large pot over medium heat.
    • Add the diced onion, carrot, and celery. Sauté for 5-7 minutes until softened.
    • Stir in the garlic, cinnamon, cumin, and paprika, cooking for 1-2 minutes until fragrant.
  2. Brown the Chicken
    • Add the chicken pieces to the pot. Cook for 5-6 minutes, stirring occasionally, until they are lightly browned on the outside.
  3. Add the Quinoa and Broth
    • Stir in the rinsed quinoa and chicken broth.
    • Season with thyme, salt, and pepper. Bring to a boil, then reduce heat to low. Cover and simmer for 10 minutes.
  4. Cook the Butternut Squash
    • Add the cubed butternut squash to the pot. Cover and simmer for another 15-20 minutes, or until the quinoa is cooked, the squash is tender, and the chicken is fully cooked through.
  5. Final Touches
    • Taste the stew and adjust seasoning if needed.
    • Garnish with fresh parsley before serving.
