  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup light brown sugar
  • 1 large egg
  • ⅓ cup eggnog (store-bought or homemade)
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt

For the Eggnog Frosting:

  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tablespoons eggnog
  • ½ teaspoon vanilla extract
  • ¼ teaspoon ground nutmeg (plus extra for sprinkling)

Instructions

Step 1: Preheat and Prepare the Pan

  1. Preheat your oven to 350°F (175°C).
  2. Line a 9×13-inch baking pan with parchment paper, leaving overhang for easy removal.

Step 2: Make the Cookie Bar Dough
3. In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
4. Beat in the egg, eggnog, and vanilla extract until combined.
5. In a separate bowl, whisk together the flour, baking powder, baking soda, nutmeg, and salt.
6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Step 3: Bake the Cookie Bars
7. Spread the dough evenly into the prepared pan using a spatula.
8. Bake for 18-22 minutes, or until the edges are lightly golden and the center is set.
9. Remove from the oven and allow to cool completely in the pan.

Step 4: Make the Eggnog Frosting
10. In a mixing bowl, beat the softened butter until smooth.
11. Gradually add powdered sugar, 1 cup at a time, mixing well.
12. Add the eggnog, vanilla extract, and nutmeg, and beat until the frosting is light and creamy.

Step 5: Frost and Decorate
13. Spread the frosting evenly over the cooled cookie bars.
14. Sprinkle with additional ground nutmeg for a festive touch.

Step 6: Slice and Serve
15. Use the parchment paper to lift the bars out of the pan. Slice into squares or rectangles and enjoy!
