Ingredients
For the Soup:

2 tbsp olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

2 stalks celery, diced

2 carrots, peeled and diced

1 tsp dried thyme

1 tsp dried oregano

½ tsp black pepper

½ tsp smoked paprika

6 cups chicken or turkey broth

1 cup wild rice, rinsed and drained

2 cups cooked turkey, shredded or cubed

1 cup fresh oysters, drained and chopped

1 cup half-and-half or heavy cream
-
2 tbsp fresh parsley, chopped (for garnish)

Instructions
Step 1: Sauté the Aromatics

Heat olive oil in a large pot over medium heat.

Add onions, garlic, celery, and carrots. Sauté for 5-7 minutes until the vegetables are softened and fragrant.

Add thyme, oregano, black pepper, and smoked paprika. Stir to coat the vegetables in the spices.
Step 2: Cook the Wild Rice

Pour in the broth and bring to a boil.

Add the rinsed wild rice and reduce the heat to low.

Cover and simmer for 35-40 minutes, or until the rice is tender.
Step 3: Add Turkey & Oysters

Once the rice is fully cooked, stir in the cooked turkey and chopped oysters.

Simmer for an additional 10 minutes to allow the flavors to meld.
Step 4: Add the Cream

Reduce the heat to low and stir in the half-and-half or heavy cream.

Let the soup simmer for 5-7 minutes, stirring occasionally, until it thickens slightly.

Taste and adjust seasoning with salt as needed.
Step 5: Garnish & Serve
