    • 1 bay leaf
    • Salt and pepper, to taste
  • For Creaminess:
    • 1 cup heavy cream or half-and-half
    • 2 tablespoons all-purpose flour (optional, for thickening)

Instructions

Step 1: Sauté the Vegetables

  1. Melt butter in a large pot over medium heat. Add the diced onion, celery, carrot, and garlic. Sauté until softened, about 5 minutes.

Step 2: Build the Soup Base

  1. Pour in the chicken or turkey broth, then add the thyme, bay leaf, and cooked wild rice. Bring to a simmer.

Step 3: Add the Turkey and Oysters

  1. Stir in the cooked turkey and oysters with their liquor. Simmer gently for 5-7 minutes, allowing the flavors to meld.

Step 4: Thicken (Optional)

  1. For a thicker soup, whisk the flour into the heavy cream until smooth, then stir the mixture into the soup. Cook for 3-5 minutes, stirring, until slightly thickened.

Step 5: Final Touches

  1. Season the soup with salt and pepper to taste. Remove the bay leaf and discard.

Notes

  • Don’t Overcook the Oysters: They only need a few minutes in the simmering broth to cook perfectly.
