- 1 cup heavy cream or half-and-half
- 2 tablespoons all-purpose flour (optional, for thickening)
Instructions
Step 1: Sauté the Vegetables
- Melt butter in a large pot over medium heat. Add the diced onion, celery, carrot, and garlic. Sauté until softened, about 5 minutes.
Step 2: Build the Soup Base
- Pour in the chicken or turkey broth, then add the thyme, bay leaf, and cooked wild rice. Bring to a simmer.
Step 3: Add the Turkey and Oysters
- Stir in the cooked turkey and oysters with their liquor. Simmer gently for 5-7 minutes, allowing the flavors to meld.
Step 4: Thicken (Optional)
- For a thicker soup, whisk the flour into the heavy cream until smooth, then stir the mixture into the soup. Cook for 3-5 minutes, stirring, until slightly thickened.
Step 5: Final Touches
- Season the soup with salt and pepper to taste. Remove the bay leaf and discard.
