- 4 cups chicken or vegetable broth
- 1 can (14 oz) coconut milk
- 1 tablespoon fish sauce (or soy sauce for a vegetarian option)
- 1 teaspoon brown sugar
- ½ lb large shrimp, peeled and deveined
- 1 cup mushrooms, sliced (optional)
- 1 red bell pepper, thinly sliced
- 1 cup fresh spinach or bok choy
- 1 tablespoon lime juice
- Fresh cilantro or Thai basil, for garnish
- Lime wedges, for serving
Instructions
Step 1: Sauté Aromatics
- Heat the vegetable oil in a large pot over medium heat.
- Add the diced onion and cook for 2-3 minutes, until softened.
- Stir in the garlic, ginger, and red curry paste, cooking for 1-2 minutes until fragrant.
Step 2: Build the Broth
4. Pour in the chicken or vegetable broth and stir to combine with the curry paste.
5. Add the coconut milk, fish sauce, and brown sugar. Stir well and bring to a gentle simmer.
Step 3: Cook the Vegetables and Shrimp
6. Add the mushrooms and red bell pepper to the pot. Simmer for 5 minutes, until the vegetables are tender.
7. Add the shrimp and cook for 3-4 minutes, until they turn pink and are cooked through.
8. Stir in the spinach or bok choy and cook for 1-2 minutes, just until wilted.
Step 4: Add Finishing Touches
9. Remove the pot from the heat and stir in the lime juice.
10. Taste and adjust seasoning with more fish sauce, lime juice, or sugar if needed.
