Ingredients
For the Curry:
- 1 lb shrimp, peeled and deveined
- 2 tablespoons vegetable oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons Thai red curry paste
- 1 can (14 oz) coconut milk
- 1 tablespoon fish sauce (or soy sauce for a vegetarian option)
- 1 teaspoon brown sugar
- 1 red bell pepper, sliced
- 1 cup snap peas or green beans
- 1 small carrot, julienned
- Juice of 1 lime
For Garnish:
- Fresh cilantro, chopped
- Lime wedges
- Cooked jasmine rice or noodles (for serving)
Instructions
Step 1: Sauté Aromatics
- Heat the vegetable oil in a large skillet or wok over medium heat.
- Add the onion and cook until softened, about 2-3 minutes.
- Stir in the garlic and ginger, cooking for another minute until fragrant.
Step 2: Add Curry Paste
4. Add the red curry paste to the skillet, stirring for 1-2 minutes to release its flavors.
Step 3: Build the Sauce
5. Pour in the coconut milk, fish sauce, and brown sugar. Stir well to combine.
6. Bring the sauce to a simmer and cook for 5 minutes, allowing the flavors to meld.
Step 4: Add Vegetables and Shrimp
7. Add the bell pepper, snap peas, and carrot to the skillet. Simmer for 3-4 minutes until the vegetables are tender-crisp.
8. Stir in the shrimp and cook for 2-3 minutes, or until the shrimp turn pink and opaque.
9. Squeeze in the lime juice and stir.
Step 5: Serve and Garnish
10. Spoon the curry over cooked jasmine rice or noodles.
11. Garnish with fresh cilantro and serve with lime wedges on the side.
