  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe bananas (about 2 large bananas)
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 350°F (175°C). Grease your loaf pan with nonstick spray or line it with parchment paper.

Step 2: Mix the Dry Ingredients

  1. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg (if using).

Step 3: Cream the Butter and Sugar

  1. In a large bowl, beat the butter and sugar with a hand mixer or whisk until light and fluffy.

Step 4: Add Wet Ingredients

  1. Beat in the eggs, one at a time, followed by the vanilla extract. Stir in the mashed bananas and crushed pineapple until well combined.

Step 5: Combine Wet and Dry Ingredients

  1. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix. Fold in the nuts, if using.

Step 6: Bake the Bread

  1. Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

Step 7: Cool and Serve

  1. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
