- 1 lb ground beef (or ground turkey)
- 1 medium onion, diced
- 1 green bell pepper, diced
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper, to taste
- 1 cup uncooked white or brown rice
- 2 cups beef or chicken broth
- 1 (10.5 oz) can cream of mushroom soup (or cream of chicken soup)
- 1 cup shredded cheddar cheese (or your favorite cheese blend)
- 1/2 cup frozen peas or corn (optional)
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
Step 2: Cook the Ground Beef
- In a large skillet over medium heat, cook the ground beef until browned, breaking it into crumbles as it cooks.
- Add the diced onion and green bell pepper. Sauté for 3-4 minutes until softened.
- Season with garlic powder, paprika, salt, and pepper. Drain any excess grease if needed.
Step 3: Assemble the Casserole
- In a large bowl, mix together the uncooked rice, beef broth, and cream of mushroom soup. Stir until well combined.
- Add the cooked ground beef mixture to the bowl and stir to combine. If using frozen peas or corn, fold them in now.
- Pour the mixture into the prepared baking dish and spread it out evenly.
Step 4: Bake the Casserole
- Cover the dish with aluminum foil and bake for 50-60 minutes, or until the rice is tender and fully cooked.
- Remove the foil, sprinkle the shredded cheese evenly over the top, and return to the oven for 5-10 minutes until the cheese is melted and bubbly.
Step 5: Garnish and Serve
- Let the casserole cool slightly before serving.
- Garnish with chopped parsley and enjoy!
