Instructions
Step 1: Make the Cookie Dough
- In a large mixing bowl, beat butter, granulated sugar, and brown sugar until light and fluffy.
- Add eggs and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
- Gradually add dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the chocolate chips.
Step 2: Bake the Cookies
6. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
7. Scoop dough into 1-inch balls and place them on the baking sheet, about 2 inches apart.
8. Bake for 8-10 minutes until the edges are set but the centers are still soft.
9. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Step 3: Make the Chocolate Filling
10. In a bowl, beat butter until smooth and creamy.
11. Add powdered sugar, cocoa powder, heavy cream, vanilla, and a pinch of salt. Beat until light and fluffy.
12. If the filling is too thick, add a little more cream until it reaches a spreadable consistency.
Step 4: Assemble the Sandwich Cookies
13. Spread or pipe a generous layer of chocolate filling onto the flat side of one cookie.
14. Top with another cookie and gently press to create a sandwich.
15. Repeat with the remaining cookies.
Notes
- Use High-Quality Cocoa Powder: It makes a difference in the depth of chocolate flavor.
- Don’t Overbake: The cookies should be soft in the center for a fudgy texture.
- Chill the Dough (Optional): If your dough is too soft, chill for 30 minutes before baking for thicker cookies.
- For a Fun Twist: Add a hint of espresso powder for a deeper chocolate taste!
