Ingredients

  • 12 oz fettuccine or your favorite pasta
  • 1 lb shrimp (peeled and deveined)
  • 2 tablespoons olive oil or butter
  • 4 garlic cloves, minced
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1/4 teaspoon ground nutmeg (optional, for added depth)
  • Salt and pepper, to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil.
  2. Add the fettuccine and cook until al dente, according to package instructions. Reserve 1/2 cup of pasta water, then drain and set aside.

Step 2: Sauté the Shrimp

  1. Heat olive oil or butter in a large skillet over medium heat.
  2. Season the shrimp with salt and pepper, then add to the skillet.
  3. Cook for 2-3 minutes per side until pink and cooked through. Remove the shrimp from the skillet and set aside.

Step 3: Prepare the Alfredo Sauce

  1. In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant.
  2. Pour in the heavy cream and bring to a gentle simmer.
  3. Stir in the Parmesan cheese, nutmeg (if using), salt, and pepper. Cook for 3-5 minutes until the sauce thickens slightly.

Step 4: Combine Everything

  1. Add the cooked pasta to the skillet, tossing to coat it in the creamy sauce. Use the reserved pasta water to adjust the consistency, if needed.
  2. Return the cooked shrimp to the skillet and mix gently.

Step 5: Serve and Enjoy

  1. Transfer the pasta to serving plates or a large bowl.
  2. Garnish with chopped parsley and extra Parmesan cheese, if desired.
  3. Serve warm and enjoy every creamy, savory bite!

Notes

  • Use Fresh Parmesan: Grate it yourself for a smoother sauce—pre-grated cheese may not melt as evenly.
