Ingredients
- 12 oz fettuccine or your favorite pasta
- 1 lb shrimp (peeled and deveined)
- 2 tablespoons olive oil or butter
- 4 garlic cloves, minced
- 2 cups heavy cream
- 1 cup grated Parmesan cheese
- 1/4 teaspoon ground nutmeg (optional, for added depth)
- Salt and pepper, to taste
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
Step 1: Cook the Pasta
- Bring a large pot of salted water to a boil.
- Add the fettuccine and cook until al dente, according to package instructions. Reserve 1/2 cup of pasta water, then drain and set aside.
Step 2: Sauté the Shrimp
- Heat olive oil or butter in a large skillet over medium heat.
- Season the shrimp with salt and pepper, then add to the skillet.
- Cook for 2-3 minutes per side until pink and cooked through. Remove the shrimp from the skillet and set aside.
Step 3: Prepare the Alfredo Sauce
- In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant.
- Pour in the heavy cream and bring to a gentle simmer.
- Stir in the Parmesan cheese, nutmeg (if using), salt, and pepper. Cook for 3-5 minutes until the sauce thickens slightly.
Step 4: Combine Everything
- Add the cooked pasta to the skillet, tossing to coat it in the creamy sauce. Use the reserved pasta water to adjust the consistency, if needed.
- Return the cooked shrimp to the skillet and mix gently.
Step 5: Serve and Enjoy
- Transfer the pasta to serving plates or a large bowl.
- Garnish with chopped parsley and extra Parmesan cheese, if desired.
