Ingredients
For the Lobster Alfredo:
-
1 lb lobster meat, cooked and chopped (or 2 lobster tails)
-
12 oz fettuccine or linguine pasta
-
3 tbsp unsalted butter
-
3 cloves garlic, minced
-
1 cup heavy cream
-
1 cup whole milk
-
1 cup freshly grated Parmesan cheese
-
1/4 cup cream cheese, softened (for extra creaminess)
-
1/2 tsp salt
-
1/4 tsp black pepper
-
1/4 tsp paprika
-
1/4 cup fresh parsley, chopped (for garnish)
-
Lemon wedges (for serving)
Optional Add-Ins:
-
1/2 cup baby spinach
-
1/4 cup sun-dried tomatoes, chopped
Instructions
Step 1: Cook the Pasta
-
Bring a large pot of salted water to a boil.
-
Cook the fettuccine or linguine according to package instructions until al dente.
-
Reserve 1/2 cup pasta water, then drain the pasta and set aside.
Step 2: Prepare the Lobster
-
If using raw lobster tails, steam or boil them for 6-8 minutes until fully cooked.
-
Allow to cool slightly, then chop the lobster meat into bite-sized pieces.
-
If using pre-cooked lobster meat, simply chop it and set aside.
Step 3: Make the Alfredo Sauce
-
In a large skillet over medium heat, melt butter.
-
Add minced garlic and sauté for 1-2 minutes until fragrant.
-
Pour in heavy cream and whole milk, whisking to combine.
-
Bring to a gentle simmer, then reduce heat to low.
-
Add Parmesan cheese and cream cheese, whisking until the sauce is smooth and creamy.
-
Season with salt, pepper, and paprika.
-
If the sauce is too thick, add a splash of reserved pasta water to reach the desired consistency.
Step 4: Combine Lobster and Pasta
-
Add the chopped lobster meat to the Alfredo sauce, stirring gently to coat.
-
Add the cooked pasta and toss to combine, ensuring every strand is well-coated with the sauce.
-
If desired, add baby spinach and sun-dried tomatoes at this point.
Step 5: Garnish & Serve
-
Remove the skillet from heat and sprinkle fresh parsley over the pasta.
-
Serve immediately with lemon wedges on the side for a burst of brightness.
-
Garnish with additional Parmesan cheese and a dash of paprika for extra flavor.
Notes
-
Choose Fresh Lobster: Fresh lobster meat provides the best texture and flavor. If using frozen, thaw thoroughly before cooking.
-
Reserve Pasta Water: This starchy water helps thin the sauce without sacrificing creaminess.
-
Low & Slow: Keep the heat on low when making the Alfredo sauce to prevent curdling.
-
Cheese Quality Matters: Use freshly grated Parmesan for the best melt and flavor.
