Ingredients

Scale

Dry Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Wet Ingredients

  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/3 cup vegetable oil
  • 1/2 cup plain yogurt or sour cream
  • 1/3 cup orange juice (freshly squeezed for best flavor)
  • 1 teaspoon vanilla extract
  • Zest of 1 orange

Add-ins

  • 1 cup fresh or frozen cranberries (roughly chopped)
  • 3/4 cup shelled pistachios (roughly chopped)

Instructions

Step 1: Prepare the Oven and Pan

  1. Preheat your oven to 350°F (175°C).
  2. Grease and lightly flour a 9×5-inch loaf pan, or line it with parchment paper for easy removal.

Step 2: Mix the Dry Ingredients

  1. In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Step 3: Combine the Wet Ingredients

  1. In another bowl, beat the eggs, granulated sugar, and brown sugar until smooth.
  2. Mix in the oil, yogurt, orange juice, vanilla extract, and orange zest.

Step 4: Combine and Add Mix-ins

  1. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  2. Gently fold in the chopped cranberries and pistachios.

Step 5: Bake the Bread

  1. Pour the batter into the prepared loaf pan and smooth the top.
  2. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  3. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • Avoid Overmixing: Mix just until the dry ingredients are incorporated to keep the bread tender.
  • Use Fresh Ingredients: Fresh orange zest and juice make a big difference in flavor.
  • Customize: Add a drizzle of glaze made with powdered sugar and orange juice for extra sweetness.
