Ingredients

For the Risotto:

  • Arborio Rice (1 cup): The key to creamy risotto.

  • Onion (1 small, finely chopped): Adds sweetness and depth.
  • Garlic (2 cloves, minced): Brings out rich, savory flavors.
  • Chicken or Vegetable Broth (4 cups, warmed): For slowly cooking the risotto.
  • White Crab Meat (½ cup): Delicate, sweet, and flaky.
  • Shrimp (½ lb, peeled and deveined): Tender and juicy.
  • Lemon Zest (1 tsp) & Lemon Juice (1 tbsp): Bright, citrusy notes.
  • Parmesan Cheese (½ cup, grated): Creamy, nutty finish.
  • Butter (2 tbsp): Adds richness.
  • Fresh Parsley (2 tbsp, chopped): For garnish.
  • Salt & Pepper: To taste.

Instructions

Step 1: Sauté the Aromatics
In a large skillet, heat olive oil over medium heat. Add the chopped onion and cook until softened, about 3–4 minutes. Stir in garlic and cook for 1 minute until fragrant.

Step 2: Toast the Rice
Add the Arborio rice to the skillet and stir to coat in the oil. Cook for 2–3 minutes until the rice is lightly toasted and has a slightly nutty aroma.

Step 3: Slowly Add Broth
Ladle in ½ cup of warm broth, stirring constantly until absorbed. Continue adding broth in small amounts, stirring frequently, until the risotto is creamy and the rice is tender (about 20–25 minutes).

Step 4: Cook the Shrimp
In a small separate pan, cook the shrimp in 1 tablespoon of butter over medium heat for 2–3 minutes per side, or until pink and opaque. Set aside.

Step 5: Finish the Risotto
When the rice is almost done, stir in the crab meat, cooked shrimp, lemon zest, lemon juice, Parmesan, and the remaining butter. Cook for another 2–3 minutes to let the flavors meld. Season with salt and pepper to taste.

Step 6: Serve and Garnish
Plate the risotto and garnish with fresh parsley and a sprinkle of extra Parmesan if desired.
