Instructions

Step 1: Season and Sear the Cod

  1. Pat the cod fillets dry with a paper towel and season both sides with paprika, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add the cod fillets and sear for 3–4 minutes per side, or until golden and cooked through. Remove the fish and set aside.

Step 2: Make the Roasted Red Pepper Sauce

  1. In the same skillet, add a tablespoon of olive oil and sauté the garlic and onion until softened, about 2–3 minutes.
  2. Add the roasted red peppers, broth, smoked paprika, salt, and pepper. Simmer for 5 minutes to allow the flavors to meld.
  3. Transfer the mixture to a blender or food processor and blend until smooth.
  4. Return the sauce to the skillet over low heat and stir in the heavy cream. Adjust seasoning as needed.

Step 3: Combine and Serve
