For the Steak:
-
4 (6 oz) beef tenderloin steaks (1-inch thick)
-
2 tbsp olive oil
-
1 tbsp unsalted butter
-
½ tsp salt
-
½ tsp black pepper
For the Diane Sauce:
-
2 tbsp unsalted butter
-
1 shallot, finely chopped
-
2 cloves garlic, minced
-
1 cup cremini mushrooms, sliced
-
1 tbsp Dijon mustard
-
1 tbsp Worcestershire sauce
-
½ cup beef broth
-
¼ cup heavy cream
-
1 tbsp fresh parsley, chopped
-
1 tbsp lemon juice
-
Freshly ground black pepper, to taste
Instructions
Step 1: Prepare the Steaks
-
Pat the steaks dry with paper towels to ensure a good sear.
-
Season both sides with salt and black pepper.
-
Heat 2 tbsp olive oil in a large skillet over medium-high heat.
-
Add steaks and cook for 3-4 minutes per side for medium-rare (adjust cooking time for desired doneness).
-
Transfer steaks to a plate and cover with foil to rest while you make the sauce.
Step 2: Make the Diane Sauce
-
In the same skillet, melt 2 tbsp butter over medium heat.
-
Add shallots and garlic and sauté for 1-2 minutes until softened and fragrant.
-
Add mushrooms and cook for 4-5 minutes until golden brown.
-
Stir in Dijon mustard and Worcestershire sauce, mixing until well combined.
-
Pour in beef broth and let it simmer for 3-4 minutes to reduce slightly.
-
Lower the heat and add heavy cream, stirring continuously until the sauce thickens and becomes velvety.
-
Add lemon juice and freshly ground black pepper to taste.
-
Stir in chopped parsley for a burst of freshness.
Step 3: Finish the Steaks
-
Return the steaks to the skillet, spooning the sauce over each piece.
-
Simmer for 1-2 minutes to warm through and let the meat absorb some of the sauce.
Step 4: Serve and Garnish
-
Place the steaks on serving plates and generously spoon the Diane sauce over each.
-
Garnish with extra chopped parsley and a squeeze of fresh lemon juice for added brightness.
Serving Suggestions

Notes
-
Choose the Right Cut: Beef tenderloin or filet mignon are the classic choices for this dish.
-
Avoid Overcooking: Steak Diane is traditionally served medium-rare; use a meat thermometer for accuracy.
-
Sear and Rest: Searing the steak at high heat locks in the juices, while resting ensures tender meat.
