  • 1 tablespoon olive oil

For the Sauce:

  • 2 tablespoons unsalted butter
  • 2 shallots, finely minced
  • 2 garlic cloves, minced
  • 1/4 cup beef broth
  • 2 teaspoons Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1/4 cup heavy cream
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon fresh thyme leaves (optional)
  • Lemon wedges, for serving

Instructions

Step 1: Prepare the Steak

  1. Pat the steaks dry with paper towels and season both sides generously with salt and black pepper.

Step 2: Sear the Steak

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the steaks and cook for 3-4 minutes per side for medium-rare, or adjust to your preferred doneness.
  3. Remove the steaks from the skillet and set aside, loosely covered with foil to rest.

Step 3: Make the Diane Sauce

  1. Reduce the heat to medium and add the butter to the skillet.
  2. Once melted, sauté the shallots and garlic until softened and fragrant, about 2 minutes.
  3. Stir in the beef broth, scraping up any browned bits from the bottom of the skillet.
  4. Whisk in the Dijon mustard and Worcestershire sauce. Let the sauce simmer for 1-2 minutes.
  5. Add the heavy cream and stir until the sauce is smooth and slightly thickened.

Step 4: Finish the Dish

  1. Return the steaks to the skillet, spooning the sauce over them to reheat gently.
  2. Sprinkle with fresh parsley and thyme (if using).

Step 5: Serve

  1. Transfer the steaks to plates, drizzle with extra sauce, and serve with lemon wedges for a bright, zesty touch.
