Ingredients

For the Chicken Sausages and Eggs:

  • 4 chicken sausages

  • 4 large eggs

  • 1 tbsp vegetable oil or butter

  • Salt and pepper to taste

For the Mushrooms:

  • 1 tbsp olive oil or butter

  • 2 cups button mushrooms, sliced

  • 1 garlic clove, minced

  • Pinch of salt

  • Pinch of black pepper

  • Optional: a few thyme leaves for extra flavor

For the Beans:

  • 1 can (15 oz) baked beans in tomato sauce

  • 1 tsp Worcestershire sauce (optional for depth)

  • ½ tsp smoked paprika

For the Tomatoes:

  • 2 medium tomatoes, halved

  • 1 tsp olive oil

  • Salt and pepper to taste

For the Fried Bread:

  • 4 slices of bread (thick-cut white or sourdough preferred)

  • 2 tbsp oil or butter for frying

For Garnish:

  • Chopped parsley (optional)

  • Hot sauce or ketchup on the side


Instructions

Step 1: Cook the Chicken Sausages

  1. Heat 1 tbsp oil in a large skillet over medium heat.

  2. Add chicken sausages and cook for about 8-10 minutes, turning occasionally, until browned and fully cooked.

  3. Transfer to a plate and keep warm.

Step 2: Sauté the Mushrooms

  1. In the same skillet, add a bit more oil or butter if needed.

  2. Add sliced mushrooms and garlic.

  3. Season with salt, pepper, and thyme (if using).

  4. Sauté for 5-6 minutes, until mushrooms are browned and tender.

  5. Remove from the pan and set aside.

Step 3: Warm the Baked Beans

  1. In a small saucepan, pour in the baked beans.

  2. Add Worcestershire sauce and smoked paprika.

  3. Heat over low-medium heat for 5-7 minutes, stirring occasionally.

  4. Keep warm until ready to serve.

Step 4: Pan-Roast the Tomatoes

  1. Wipe down the skillet and add a touch of oil.

  2. Place tomato halves cut-side down and cook for 3-4 minutes.

  3. Flip and cook for another 1-2 minutes until soft and slightly caramelized.

  4. Season with salt and pepper.

Step 5: Fry the Bread

  1. Heat 2 tbsp oil or butter in the skillet over medium heat.

  2. Add bread slices and fry for 2-3 minutes on each side until golden and crisp.

  3. Drain on paper towels.

Step 6: Cook the Eggs

  1. In the same skillet, crack the eggs one by one.

  2. Fry to your preferred doneness—sunny side up, over-easy, or scrambled.

  3. Season with salt and pepper.

Step 7: Assemble and Serve

 

  1. On each plate, place one or two chicken sausages.

  2. Add a serving of mushrooms, a spoonful of baked beans, and a tomato half.

  3. Top with a fried egg and a slice of crispy fried bread.

  4. Garnish with chopped parsley and serve with your favorite sauce.
