- 4 large eggs
- 1 cup button mushrooms, sliced
- 1 cup baked beans (canned or homemade)
- 2 medium tomatoes, halved

- 2 tablespoons olive oil (for cooking the sausages and vegetables)

Instructions
Step 1: Cook the Chicken Sausages
- Heat 1 tablespoon of olive oil in a large frying pan over medium heat.
- Add the chicken sausages and cook for 8-10 minutes, turning frequently, until browned and cooked through. Remove and set aside.
Step 2: Sauté the Mushrooms
- In the same pan, add another tablespoon of olive oil.
- Toss in the sliced mushrooms and sauté for 4-5 minutes, or until tender and golden. Season with a pinch of salt and pepper. Remove and set aside.
Step 3: Cook the Tomatoes
- Place the halved tomatoes, cut side down, in the pan. Cook for 2-3 minutes until lightly charred and softened. Remove and set aside.
Step 4: Heat the Baked Beans
- Warm the baked beans in a small saucepan over low heat, stirring occasionally.
Step 5: Fry the Bread
- Melt 2 tablespoons of butter in the frying pan. Add the bread slices and fry for 1-2 minutes per side, or until golden and crispy.
Step 6: Make the Eggs
- Fry or scramble the eggs according to your preference. For fried eggs, crack them into the pan and cook until the whites are set but the yolks remain runny. Season with salt and pepper.
Step 7: Assemble and Serve
- Arrange the sausages, eggs, mushrooms, tomatoes, beans, and fried bread on a large plate. Garnish with chopped parsley, if desired. Serve hot and enjoy!
