Instructions

Step 1: Prepare the Cinnamon Swirl

  1. In a small bowl, mix together the softened butter, brown sugar, and cinnamon.
  2. Stir until smooth and set aside.

Step 2: Make the Pancake Batter

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, whisk together the milk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are fine.

Step 3: Cook the Pancakes

  1. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or cooking spray.
  2. Pour about 1/4 cup of pancake batter onto the skillet for each pancake.
  3. Immediately swirl a spoonful of the cinnamon mixture onto the batter in a spiral pattern. Use a toothpick or fork to gently swirl the cinnamon mixture into the pancake batter.
