For the Crust:
- 1 1/2 cups graham cracker crumbs (or digestive biscuits)
- 1/4 cup sugar
- 1/3 cup unsalted butter, melted
For the Cheesecake Filling:
- 3 (8 oz) packages cream cheese, softened
- 1 cup sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
For the Cinnamon Swirl:
- 1/4 cup brown sugar
- 1/4 cup granulated sugar
- 2 teaspoons ground cinnamon
- 2 tablespoons unsalted butter, melted
For the Glaze:
- 1 cup powdered sugar
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
Step 1: Prepare the Crust
- Preheat your oven to 325°F (165°C).
- In a bowl, mix the graham cracker crumbs, sugar, and melted butter until evenly combined.
- Press the mixture firmly into the bottom of a greased 9-inch springform pan.
- Bake for 8-10 minutes, then let it cool while preparing the filling.
Step 2: Make the Cheesecake Filling
- In a large bowl, beat the cream cheese and sugar until smooth and creamy.
- Add the eggs, one at a time, mixing well after each addition.
- Mix in the vanilla extract and sour cream until fully combined.
Step 3: Create the Cinnamon Swirl
- In a small bowl, mix brown sugar, granulated sugar, cinnamon, and melted butter until it forms a paste.
Step 4: Assemble the Cheesecake
- Pour half of the cheesecake filling over the prepared crust.
- Drop small spoonfuls of the cinnamon swirl mixture over the filling and swirl gently with a knife.
- Add the remaining cheesecake filling on top, then repeat with the remaining cinnamon swirl mixture.
Step 5: Bake the Cheesecake
- Place the springform pan in a water bath (wrap the outside in foil to prevent leaks).
- Bake for 55-65 minutes or until the center is set but still slightly jiggly.
- Turn off the oven, crack the door slightly, and let the cheesecake cool in the oven for 1 hour.
Step 6: Chill and Glaze
- Remove the cheesecake from the oven and refrigerate for at least 4 hours or overnight.
- Before serving, mix powdered sugar, milk, and vanilla extract to create the glaze. Drizzle over the top of the cheesecake.
